If you ship or receive food products on the Food Traceability List, you are responsible for recording key data elements (KDE’s). Documenting KDE’s must even occur when you are shipping or receiving from an entity that you own. Most significantly, you must track the lot number assigned to the food item assigned by the manufacturer. You can no longer create your own lot code for product created by another company and use that for food traceability. If the FDA requests your traceability records for a food product, they must include the lot number provided by the food manufacturer, not your own lot code.
